Some days just REALLY, REALLY, call for a cookie!   Luckily, the amazing folks over at Raw Living Foods shared this 3 ingredient, super easy, super healthy, and super delicious, Almond Butter cookie recipe with me.   I am always looking for healthy treats to add into my food prep rotation and these delicious gems fit the bill.  Almond butter is a healthy fat that is great addition to your daily nutrition.  Consuming healthy fats helps keep your hormones stable and your skin looking amazing. These cookies are also packed with protein.

Easiest and healthiest cookies-also super yummy!



1 cup almond butter

8 Tbsp fresh honey

1 large Egg- beat lightly


  1. Preheat oven to 350. Spray cookie sheets with coconut oil.
  2. In a medium bowl, mix all ingredients together. create small one inch balls for cookies, and place on cookie sheet 1 inch apart.
  3. Bake until golden on edges, about 8-10 minutes. They may not look all the way done- but after they cool they will firm up like a normal cookie.
